Olga Ivanova and Antoine Monod started Hors Saison in 2021 in Caunas, north of Bédarieux in the Hérault. On their 2 hectares they grow Viognier, Chardonnay, Cinsault, Grenache Noir and Lladoner Pelut — several parcels on distinctive red clay soils. All work in vineyard and cellar is done by hand, without machines or chemicals. From 800 bottles in the first year to nearly 5,000 in 2023 — a young estate with a clear voice.

Grenade is Hors Saison's lightest red — a fresh Grenache and Cinsault from Caunas that works equally well chilled or at room temperature. Named after the Spanish spelling of the grape and made without additives using native yeasts.

La Mouette is Hors Saison's lightest white — a fresh blend of Chardonnay and Viognier from Caunas, direct-pressed and fermented without additives. Simpler and more immediate than Dans les Bois, but with the personality that red clay soils and native yeasts deliver.

About Hors Saison
Hors Saison is a project that started out of curiosity rather than tradition. Olga Ivanova, previously working in fashion and cosmetics, and Antoine Monod settled in the village of Caunas north of Bédarieux in the Hérault. With the help of their neighbour Axel Prüfer, they took their first steps into viticulture and winemaking in 2021. The estate covers 2 hectares of organically farmed vines with Viognier, Chardonnay, Cinsault, Grenache Noir and the rare Lladoner Pelut. Several parcels are characterised by red clay soils that give the wines a distinctive mineral character. All work is consistently manual — no machines, no chemicals, no added sulphites during vinification or bottling. In the cellar, Olga and Antoine experiment constantly: elevage takes place in fibre tanks or Burgundy barrels depending on the cuvée, and each wine finds its own form. From 800 bottles in the very first harvest year to nearly 5,000 bottles in 2023 — growth is deliberately slow. Hors Saison is an estate that values character and craft over volume.
